Yemenia Suggested Brew Guide

We specifically packaged the Yemenia in 100 gram containers so that you could make 5 cups using 20 grams per cup. We recommend a pourover ratio of 1:16 for this coffee, meaning you’ll get a 320 gram cup each time, or roughly 10oz.

We highly recommend using the packet of Third Wave Water included in your box. Mix it with one gallon of distilled or filtered water and use it for each cup, including rinsing your filter. If all you have is tap water, I promise a quick trip to the grocery store for a $1 jug of water is worth your time. Also, we suggest using water at least 208°F or fresh off boil to maximize extraction.

If you’ve purchased a tin of the Yemenia, you likely already brew a lot of coffee at home. That’s good, because we’re going to recommend staying pretty close to your usual recipe. This coffee is surprisingly forgiving, so if you’re happy with how you brew coffee at home, the same recipe should work just fine. Also, because of this coffee’s immense complexity, small changes in brew technique can result in different cup profiles. We pushed the limits on various brew methods, and every cup came out delicious although different from any before it.

Method: Kalita Wave

Coffee: 20 grams

Grind: Medium to Medium-Fine relative to most Pour-Overs

Water: Filtered with Third Wave Water packet, 208°F

Total Water Volume Added: 320 grams

Brew Time: 3:00-3:15

Bloom: 50 gram bloom, wait 30-45 seconds until done bubbling

Remaining Pours: 50 grams every 30 seconds (70 gram final pour) until 320 grams total (including bloom) has been added
